Quinoa straws or cheese straws
Last week, I attempted making quinoa crackers using cooked quinoa, quinoa flour, flaxmeal, and some seeds, plus a few other helpful ingredients. It was a disaster. But not the end of the world.
I love silver lining surprises. While the dough and my patience had not a hope in hell of teaming up to achieve the crispy wafer intended, the opportunity to create a wholesome take on traditional cheese straws (with or without the cheese) was too fun to pass up. The result was a savory appetizer that makes cheese straws almost sophisticated. Or at least hip. (But, take that with a grain of salt…I’m embracing my natural nerdiness and accepting I’m no judge of what’s trendy.)
I wish I could chat more…but time always seems to be flowing away on swift currents these days, and my computer time really needs to be devoted to work. One thing I’d like to quickly say, though, these little kitchen mishaps serve as little validations lessons learned, whether my ingredients are salvaged into something edible or not. Since Felix was born, I’ve dived into living present, at last. He changes so fast, it makes my heart pound, and I don’t want to miss a thing. As a result, I can finally step back and stem the reflexive habit of dwelling on past mistakes, embarrassments, and hurts until they burn; I can curb the fear of failure and just try, the way I want my Little Monkey to as he grows. As a result, I’m ok with posting something so quick it feels incomplete; and I can take an ugly doughy mess and discover the hidden treat.

(The dough can hold its own without cheese, for a vegan option!) Yield: 12 straws, approximately 4×1-inches each
- 1 cup cooked, cooled quinoa
- 1 cup quinoa flour
- ¼ cup flax meal
- 1 teaspoon baking soda
- ⅓ cup olive oil
- ¼ cup water
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- ½ teaspoon sea salt
- ¼ cup sesame seeds
- ½ cup shredded cheddar cheese (optional)
- Preheat the oven to 400 F. Line a large baking sheet with parchment paper.
- In a food processor, combine the quinoa, quinoa flour, flax meal, baking soda, salt, pepper, thyme, sage, and olive oil. Transfer to a bowl and stir in sesame seeds and cheese, if using.
- Evenly spread quinoa mixture onto prepared baking sheet with a spatula or flour-dusted rolling pin until it is approximately ½ -inch thick. Cut into straws.
- Bake in preheated oven for 5-7 minutes, or until edges are brown.
- Let cool 5 minutes and remove from sheet. Serve warm.
