Christina’s date cookie makeover: quinoa cinnamon date cookies
I’d been meaning to get to this cookie project since March. The goal was successful results in time for Christina, librarian extraordinaire and cure-all hug personified, to celebrate her birthday. Two months later, the first attempt finally materialized, and yum.
I used to make cinnamon spiced date cookies for date-loving Christina years ago, when she supported my classroom, and I thought they were “healthy for cookies” cookies. Since then, my ideas on what that means have evolved, which is one of the pitfalls of this blog. There’s never time to update every recipe to fit altered philosophies and new knowledge. I never did put the original date cookies on the blog, though. Maybe my subconscious knew better. As far as the updated version is concerned…trends may swing and take these off the plate, but for now I’m enjoying every crumb. Quinoa flour, 1/2 cup coconut sugar per batch (I want to experiment with no sugar, just dates…will update as soon as that’s done), coconut oil and unsweetened applesauce, cinnamon and chopped dates. They freeze well and may even taste better straight from the freezer, making them even more dangerously tempting–the only downside.
While it may seem like a pithy excuse for procrastination, it seemed fitting that Christina’s cookie makeover would finally take place on Mother’s Day weekend. She’s isn’t my mother (I love you, Mom!), but is a devoted one, and embodies maternal wisdom. She has been a source of comfort and guidance through the years, as comfortable as Mother Goose– only hip, dynamic, witty, sharp, and talented in a way Mother Goose may be but isn’t typically known for. She reminds me of some of the many contradictions I’ve been discovering are part and parcel of being a mom/parent:
*”Momming” tough, hard work, but it isn’t a job so much as it is life force and being.
*It’s a huge part of your identity, but it cannot swallow you up and become your identity; you have to be your own person to be the role model you need to be, and besides that, your “job” is a gradual letting go, and you need your own roots to stand on with that kind of enormous release.
*It’s a continuous balancing act, yet it isn’t an act. Juggling nonstop is the new normal.
*Then again, it is an act, because sometimes you’re so very, very tired, or frustrated, or scared, and while sharing emotions is important you know there is a point where you need to hold back, you need to keep smiling.
*Everyone has a unique, personal journey, but at the end of the day, every one’s journey is all about love.

Quinoa cinnamon date cookies
Yield: approximately 20 cookies
- 1 1/2 cups quinoa flour
- 1 cup quick oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 cup coconut palm sugar
- 3/4 cup chopped dates
- pinch salt
- 1/2 cup liquid coconut oil
- 1/2 cup unsweetened applesauce
**Update: I’ve since made these with NO coconut sugar or any added sugar and have cut back to 1/3 cup liquid coconut oil–love this version, and it’s now the norm! 🙂
- Preheat oven to 350 F.
- In a large bowl, whisk quinoa flour, oats, baking powder, baking soda, cinnamon, ginger, and coconut sugar. Stir in dates.
- Add coconut oil and unsweetened applesauce to dry mixture and stir to form a dough.
- Shape dough into balls (roughly 1 inch) and place two inches apart on baking sheets coated with cooking spray. Bake at 350 for 15 minutes or until lightly browned.
